Poached eggs have long been one of my cooking nemeses. I’ve tried all the hacks- the swirling water, adding vinegar, adding salt, using a deep pot, using a shallow pot, even straining the eggs through a fine mesh sieve!

Still, my eggs were often misshapen and whispy, overcooked or unappealing and goopy. Plus, that’s a whole lot of stress for a dang poached egg!

I had resigned myself to making poached eggs one at a time in the microwave, but then my hubby got a sous vide machine for Christmas and everything changed.

It took us a bit to overcome the intimidation factor of sous vide cooking, but we were surprised to learn it’s far easier than we expected. In fact, it’s much easier than cooking on the stove top, and it’s an absolute game changer for poached eggs!

Sous Vide Poached Eggs are:

  • Almost entirely hands off.
  • Cooked in the shell so they keep their shape.
  • Perfectly done every time, with a cooked white and runny yolk.
  • Great for making poached eggs for a crowd. This method can be used for making 1 egg or a dozen eggs, and they’ll all be ready at the same time!

Today, we’re going to share a little more about what sous vide cooking is, and teach you how to make Perfect Sous Vide Poached Eggs.

What is sous vide?

Sous vide is a cooking method which uses temperature controlled water to deliver precise, consistent results every time. Want a steak cooked at exactly 135 degrees? No problem. How about a jammy poached egg? It can do that too!

Most sous vide machines can be used on any size pot of water, and fairly quickly heat it to the exact temperature you specify. The beauty of cooking sous vide is that you can’t overcook the food! A steak contained safely in a plastic bag can hang out in a sous vide machine for hours, or until the precise moment you’re ready to take it out and sear it.

Sous vide’s precision and flexibility is why it has been used in restaurant kitchens for years. In the last decade, consumer sous vide machines have become more and more affordable and made this unique method of cooking accessible to the home cook.

We purchased this Anova machine, which we’ve been impressed with so far. It heats water quickly, is very easy to use, and clocks in around $125 (but can be found around the holidays for $25 off).

Today, we’ll show you how to use it to make one of the most finicky recipes- poached eggs!

  1. To make the eggs, place the sous vide machine in a large pot filled with water. Turn the temperature to 167 degrees Fahrenheit and allow the water to preheat. This will take anywhere from 12-18 minutes depending on the size of the pot and your machine.
  2. Use a slotted spoon to gently lower the eggs into the water. You can add as many as will fit in a single layer. Set a timer for 12 minutes.
  3. Remove the eggs and immediately place them in an ice water bath for 30-60 seconds or until they’re cool enough to handle.
  4. Crack them into a bowl, sprinkle with salt and pepper, and serve!

Tip: For consistent results, always take the eggs straight from the fridge to the heated water.

My favorite way to eat poached eggs is simply on top of a slice of buttery toasted sourdough bread!

Of course, you can’t go wrong with a poached egg on top of Everything Bagel Eggs Benedict or a burger, especially a Breakfast Burger!

Poached eggs also make an incredible sauce for Ramen Noodle Bowls or Sweet Potato and Sausage Hash.

You can even add a poached egg to a salad, like this Brunch Salad!

Notes

For best results, use eggs that are being taken straight out of the refrigerator.
