I did a Bloody Mary segment on Jason show Tv and ended up with about 12 cups of Bloody Mary Mixers from all over the country. Even the heartiest Bloody Mary fun would have a hard time drinking all of those in a pandemic so I made some delicious Bloody Mary shrimp and grits. This recipe is super easy and a real keeper. Ingredients for Shrimp
- 12 Large shrimp peeled and deveined
- ¼ cup red, green or yellow peppers chopped
- ½ cup onion chopped
- 1 Tbsp olive oil
- 2 cups of your favorite Bloody Mary Mix
- 2 cloves garlic
- 2 Tbsp of your favorite BBQ sauce, Ketchup or a mixture of both
Ingredients for Cheesy Grits
- 1 cup Bobs Red Mill Corn Grits
- 1 tsp salt
- 1 cup water
- 1.5 cups milk
- 1/4 cup Parmesan cheese
- 1/4 cup Sharp Cheddar cheese
Instructions for Shrimp
- Saute peppers and onions in olive oil on medium heat
- Add Bloody Mary mix
- Boil on high for about 5 minutes until the mixture starts to evaporate some of its water and thickens (this really depends on the type of mix you use so watch it carefully – you want a sauce that is like a tomato sauce)
- Add BBQ or Ketchup to the sauce to continue thickening
- Grate 2 cloves Garlic with a Microplane grater
- Add shrimp and cook through until shrimp is opaque about 2 minutes
- Serve with Creamy Grits
Instructions for Creamy Grits
- Bring water and salt to a boil. Add Corn Grits and reduce heat. Cook slowly for about 5 minutes, add milk, 1/2 cup at a time, and stir occasionally. Remove from heat, cover, and let stand for a couple of minutes. This will make enough for four generous helpings
