Chicken Artichoke Flatbread

I’ve said it before and I’ll say it again flatbread pizza is the best pizza and this chicken artichoke flatbread pizza is no exception.

Flatbread pizzas are so easy to make. They are similar to a thin crust pizza and typically have less sauce so the crust doesn’t get soggy. I love piling on all of my favorite toppings.

Flatbread pizzas are so easy to customize. For this pizza, I decided to add grilled chicken, fresh spinach, and marinated artichokes, and sun-dried tomatoes.

Ingredients

Flatbread: You can make this pizza with store bought flatbread or make your own. If you have a sourdough starter you can also use my recipe for sourdough flatbread.

Cream Cheese: If using block cream cheese allow it to soften and come to room temperature to make spreading easier. If like me you forget to get the cream cheese out of the refrigerator to soften, microwave it for about 30 seconds at 50% power. It should then be very soft and spreadable.

You could also use cream cheese spread. I think the chive and onion, garlic herb, or garden vegetable flavors would work really well.

Chicken: The chicken can be grilled, baked, or poached.You could also use store-bought rotisserie chicken.

Spinach:  I recommend using fresh for the best flavor. If you only have frozen make sure to squeeze out all of the moisture before using.

Artichokes: Artichoke hearts can be found in a can, jar or frozen. If using frozen artichokes you will want to thaw and drain them first.

Red Onion

Sun-Dried Tomatoes: Sun-dried tomatoes typically come in one of two ways, dried in a bag or dried and soaking in olive oil these are usually found with the pickles and condiments. I prefer the oil soaked sun-dried tomatoes. It’s like buying two products in one delicious sun-dried tomatoes and amazing tomato flavored olive oil. Save the olive oil for making salad dressing or roasting vegetables.

Mozzarella and Parmesan Cheese

Preheat oven to 450 degrees F. Place the flatbread onto a metal baking sheet and spread with the cream cheese.

Top with chicken, spinach, artichokes, red onion, and sun-dried tomatoes.

Sprinkle with mozzarella and Parmesan cheese. Bake for 8-10 minutes until the cheese is melted and the crust is crispy.

How to store leftovers

Refrigerate leftovers in an airtight container for 2-3 days. For best results, reheat in the oven. Leftovers can also be microwaved but the crust won’t be as crisp..

How to reheat flatbread pizza

There are a couple of ways to reheat flatbread pizza.

  • Microwave: You can reheat it in the microwave at 30-second intervals but the flatbread will not be as crunchy. 
  • Oven: Preheat the oven to 250 degrees Farenheight and bake the flatbread pizza on a sheet pan for 5-10 minutes. This is my favorite method.

How to make your own frozen pizza

I admit that some nights I just don’t feel like cooking and usually have a frozen pizza or two stashed in the freezer. These flatbread pizzas make a perfect freezer meal. Once reheated in the oven, you can’t tell that they were ever frozen.

  • To freeze: Assembled the flatbread pizzas on a baking sheet and freeze until frozen solid, about one hour. Wrap the frozen pizzas individually with plastic wrap to help keep the toppings in place. Then place them in a freezer bag and label with the contents and date. The frozen flatbread pizzas will stay fresh in the freezer for up to 2 months.
  • To reheat: Preheat oven to 450 degrees F. Place the frozen flatbread pizzas directly on the oven rack and bake for 13-18 minutes. The pizzas are done when the cheese is melted and the center is completely warmed through.

Tips

  • Try making your own flatbread. Flatbread is incredibly easy to make. If you happen to be a sourdough baker I put together a recipe for a flatbread that uses sourdough discard. If you don’t have a sourdough starter you can use this recipe for No Yeast Flatbread.
  • Don’t add too many toppings. Because flatbread is thinner than regular pizza crust it’s not going to hold up to mountains of toppings and cheese.
  • Vegetarian Version – substitute roasted cauliflower florets for the chicken.
  • Use a pizza stone or pizza steel. They will give you an amazingly crispy crust. You can even use it on your outside grill if you’d rather not heat up the kitchen. If you don’t have a pizza stone you can also use this pizza pan which is perforated to help crisp the crust.

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

For this chicken artichoke pizza, I decided to add grilled chicken, fresh spinach, and marinated artichokes, and sun-dried tomatoes.

  • 4 pieces of flatbread
  • 1/2 cup (114g) softened cream cheese
  • 1 cup (140g) cooked shredded chicken
  • 1 1/2 cup (45g) spinach – roughly chopped
  • 1/3 cup (73g) artichokes – drained and chopped
  • 1/4 cup (13g) diced red onion
  • 1/4 cup (14g) sliced sun-dried tomatoes packed in oil – drained
  • 1 cup (113g) shredded part-skim mozzarella cheese
  • 1/4 cup (25g) shredded Parmesan cheese
Instructions

  1. Preheat oven to 450 degrees F.
  2. Place the flatbread onto a metal baking sheet and spread with the cream cheese.
  3. Top with chicken, spinach, artichokes, red onion, and sun-dried tomatoes.
  4. Sprinkle with mozzarella and Parmesan cheese.
  5. Bake for 8-10 minutes until the cheese is melted and the crust is crispy.

Beer Battered Shrimp and Fries

“I’ll have the beer battered shrimp and fries and… a side salad.” No. No one has ever said that. This isn’t a salad-on-the-side kind of dish. It’s seriously battered, deep-fried decadence, from start to finish. The shrimp are absolutely delicious. I could eat well…. ok, more than a few of them. And the fries? Insane. I opted to double-dip them. They ended up just amazing. Yeah, they’re definitely battered and then some. But they’re sooooo good and different! And huge! All that batter makes them gigantic I tell ya!

If the double-battered monster fries scare you, they’re actually just as fantastic (or pretty much) single dipped.

Beer Battered Shrimp and Fries

I used my little Fry Daddy when I made these beer battered shrimp and fries. I’m not sure I can recommend doing that. I mean, sure, they came out fantastic, but you can’t really fry a bunch of either the shrimp or the fries at once, so it’ll take you a while to make a mess of them. The battered shrimp and fries like to stick together, so you can’t crowd them. If you can, I’d recommend using a larger fryer or a Dutch oven.

Ingredients

For the shrimp

  • 1 pound large shrimp peeled, deveined (I used 20-24 count shrimp)
  • all-purpose flour
  • vegetable oil for frying
For the shrimp batter

  • 1 cup all-purpose flour
  • 1 cup lager beer plus more, if needed
  • 2 teaspoon Old Bay Seasoning
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
For the fries

  • 2 pounds russet potatoes
  • 2 cups all-purpose flour
  • 1 tablespoon Cajun spice
  • 2 teaspoons garlic salt
  • 2 teaspoons onion powder
  • 2 teaspoons paprika
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup lager-style beer
  • vegetable oil for frying
Instructions

For the shrimp (note the fries need to soak, so start them well before you plan on eating)

  • Place the shrimp in a bowl and lightly dust with flour. Stir gently to coat. You just want a light coating, so don’t use too much flour.
  • In a large bowl, whisk together the flour, Old Bay seasoning, salt and pepper and the beer. You want the batter to be slightly thick, like a pancake batter. If it’s too thick add a small amount of beer and whisk. Let stand for 15 minutes.
  • Heat oil in your deep fryer or Dutch oven to 350 F . If you have a small deep fryer like I do, I recommend warming your oven on the lowest setting so you can put the shrimp and fries in there to keep warm while you cook all of the batches.
  • Working in batches if needed, dip shrimp in the batter and coat completely. Transfer to the oil and fry for 2 minutes per side. Remove to a paper towel lined plate to drain.
For the fries

  • Fill a large bowl with cold water.
  • Cut the potatoes into 1/4″ sticks. I did not peel mine, but you can peels yours first if you desire.
  • Transfer the potatoes to the water and soak for at least 4 hours. Ideally, you’ll want to drain and add fresh cold water every hour, but if you don’t have the time, just soak for 4 hours.
  • In a large bowl whisk together the remaining ingredients except for the oil. You want a pancake batter-like consistency. If it’s too thick, add a bit more of beer and whisk some more.
  • Heat oil in your deep fryer or Dutch oven to 350 F.
  • Working in batches, dip the fries in the batter and transfer to the hot oil. Fry for 5 minutes or until just golden but not done. Transfer to a paper towel-lined plate. Note: If you’re not double frying, you’ll want to extend the fry time and cook the fries until golden brown and crispy.
  • Now it’s time for the second fry if you’re doing it. Again dip the fries in the batter and fry until golden brown and crispy, 3-5 minutes. Remove to a paper towel-lined plate and season.
